AS OF BUILD #23, PLUGIN NOW REQUIRES JAVA 21

• Updated Gradle to 8.8
• Updated Java to 21
• Made sure plugin works on Paper 1.21.3

Plugin now collects some basic analytics data via FancyAnalytics.

• Plugin Version (eg. 1.21-23)
• Server Version (eg. 1.21.3)
• Server Software (eg. Purpur)
• Java Version (eg. 21.0.5)
• Operating System (eg. Linux)
• ...possibly some more - I'm still discovering this tool.

This data will be used to enhance future development of the plugin.

Can be disabled in the /FancyAnalytics/config.yml file.
